Mint Chocolate Cookies

I recently made Mint Chocolate Cookies for an Activity Days activity. They turned out really well, so I'm sharing the recipe...

2/3 cup butter
1 Cup sugar
1 Egg
1 Tsp vanilla
1 Cup flour
1/2 Cup cocoa
1/2 Tsp baking soda
1/4 Tsp salt
1-2/3 Cups/10-oz bag of mint chocolate chips (I used a bag of mini York Peppermint Patties...mmm)

Heat oven to 350•F

Beat butter and sugar until creamy. Add egg and vanilla, beat well. Stir together flour, cocoa, baking soda and salt; add to butter mixture. Beat well. Stir in mint chocolate chips.

Bake 8 to 9 minutes. Makes about 2 dozen.

Sounds yum! I'm going to steal it. Also, if you click Start > Run and type in "charmap" without the quotes, and hit OK, you can get the degrees sign (and TONS more) It's my favorite.

I like the mint & cookie part! I've learned to tune out the chocolates of choc chip cookies (or at least dispose discreetly into a napkin/bush O:}!) Plus, I can make this and not feel an insane desire to inhale it all. Nice trick eh?
